  • 1 red chili pepper, thinly sliced (optional)
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon curry paste (yellow or red)
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 (15-ounce) can chickpeas, drained and rinsed

  • 1/2 cup chopped fresh cilantro
  • Cooked rice, for serving

Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened about 5 minutes.

Stir in the garlic, ginger, and chili pepper (if using) and cook for an additional minute, until fragrant.

Add the bell peppers, coconut milk, vegetable broth, curry paste, soy sauce, and brown sugar. Bring to a simmer and cook for 5 minutes.

Stir in the chickpeas and broccoli florets and cook for an additional 5-7 minutes, or until the vegetables are tender-crisp.

Remove from the heat and stir in the cilantro.

Serve over cooked rice and enjoy!

  • For a richer flavor, use full-fat coconut milk.
  • If you don’t have curry paste, you can substitute with 1 teaspoon each of ground coriander, cumin, and turmeric.
  • You can add other vegetables to this curry, such as carrots, green beans, or zucchini.
  • Serve this curry with a dollop of plain yogurt or sour cream for added richness.
  • Description of coconut milk:

Coconut milk is a versatile ingredient that can be used in both sweet and savory dishes. It is made by grating the flesh of mature coconuts and then simmering it in water. The resulting liquid is a creamy, white emulsion that has a slightly sweet and nutty flavor. Coconut milk is a good source of healthy fats, and it is also a good source of vitamins and minerals, including iron, magnesium, and potassium.
